From the Line to the Dream.
Before Mané ever hit the grill, David and Alex were side by side at the legendary Momofuku Noodle Bar — David as a Jr. Sous Chef, Alex as the AGM. Late nights, loud kitchens, and a shared love of bold flavors sparked an idea: one day, they’d open something of their own.
That idea simmered for years as both sharpened their skills. David leveled up in the kitchens of Le Bernardin, one of New York’s rare three-Michelin-starred gems. Alex dove deep into cocktails, pouring at Bar Orai and Fritz, and eventually helped launch Kinjo, a sleek cocktail and omakase spot in Dumbo.
Then came the chance: a local bar looking for a kitchen partner. Alex made the call. David picked up. And just like that — the dream was back on the burner.
Mané is the result: street food soul, chef-driven flavor, and a whole lot of history between two friends who finally got to build something of their own.
